My girlfriend bought some Indian corn at the farmer's market a few weeks ago. Indian corn is that bright, multi-colored corn that families use for decorative purposes around the holidays. Can you eat that stuff? I've never seen anyone eat it or serve it anywhere. The name of the corn kind of bothers me. First of all, it sounds a little racist, plus, based on my limited knowledge of Native Americans, the last thing they would have been interested in raising would be decorative corn. I'm pretty sure the people who inhabited North America before the Europeans arrived raised edible corn.
